Sweet or Savoury Crepes (Gluten Free)
I have tried and tested many a gluten free crepe recipe. Gluten free versions of things like this sometimes come up short.
This one is perfection.
These crepes come out thin and “fold-able” and do not break when you add filling. They taste great and we loved them. I hope that you do too.
What you need:
1 3/4 cups gluten free flour (I used Robin Hood brand with xantham gum built in). {If you are making your own, you can try – 1 cup brown rice flour, 1/2 cup potato starch, and 1/4 cup tapioca flour}.
3 eggs, room temperature
2 tbsp Earth Balance coconut butter
2 cups milk of choice (I used organic soy)
What you do:
Place the flour in a large bowl.
In a separate small bowl, place the eggs, butter and milk, and whisk to combine well. Create a well in the centre of the flour, and pour in the wet ingredients. Whisk until very well combined. The batter will thicken a bit as you whisk.
Let the batter sit for appox. 10 mins.
Heat a non-stick skillet over medium heat. Pour 1/4 cup batter onto skillet. Spread it out with a spatula, so that it is shaped into a thin, round layer.
Cook over medium heat for approximately 1 1/2 minutes until the edges of the crepe turns light brown. Using a spatula, gently flip to the other side. Cook for another 30-45 seconds, or until it turns golden brown. Slide the crepe out of the skillet onto a parchment lined plate or pan. Repeat until all of the batter is used.
NOTE- One of the best features? These freeze well. If freezing, stack them one on top of another, separated with parchment paper. Place in large round glass container, or laid flat in a large, sealable freezer bag.
FILL OR TOP WITH-
Sweet – Make your own Fruit Coulis
In a medium saucepan, bring your fruit of choice (berries, sliced apples, pears, etc), 1/4 cup of water, and 1 tbsp of maple syrup to a simmer over medium heat, stirring occasionally. After about 4 minutes you will notice that the fruit/water combo turns to a sweet sauce as the fruit softens.
Add 2 tbsp of this mixture to the crepe as filling. Fold crepe over and top with fresh fruit of choice, cool berries, banana slices or kiwi. You can even add a drizzle of your favourite yogurt. YUM!
Savoury – Scrambled eggs, sauteed mushroom and onions or spread mashed avocado with sea salt and a squeeze of lime, and add long thin sliced cucumber, carrots, or red pepper. Optional – add a few cilantro leaves.
