Creamy Kale Salad with Quinoa and Shift Tahini Dressing
This salad was totally inspired by the dressing. I use this dressing on a falafel salad that I make.
I have some gorgeous kale thanks to my husband’s excellent gardening skills. I figured match up this yummy kale with the yummy tahini dressing. How can things go wrong, right? Right. It’s delicious.
What you need:
- Large bunch of kale, washed with stems removed
- drop of olive oil
- 1/2 cup shelled edamame (organic, non-GMO)
- 1/4 cup cooked quinoa (or more!)
- 2 tbsp Shift Tahini Dressing
Shift Tahini Dressing
1/3 cup tahini
1/3 cup water
1/4 cup freshly squeezed lemon juice
2 cloves fresh garlic, minced
3/4 tsp salt
1/2 tsp agave syrup
Mix in blender
Keeps in fridge for up to one week.
What you do:
- Place washed and trimmed kale leaves in large bowl.
- Add tiny drop (1/2 tsp) olive oil and massage gently into kale leaves until slightly softened.
- Add edamame to bowl and mix.
- Add Shift Tahini Dressing and mix well.
